Cheap and Easy Vegetable Bacon Soup Recipe
Today, I am excited to share one of my family’s favorite affordable soup recipes. This cheap and easy soup recipe is great for using up leftover vegetables. In my home, we always have carrots, celery, onions, and potatoes on hand, so that goes in the soup. You can use pretty much any vegetable though – throw in whatever you need to use up!
The magic ingredient in this vegetable soup is a little bit of bacon and bacon grease. It’s just a small amount, but it makes this soup so delicious, even picky eaters will gobble it up. I know my picky eater adores it!
Serve this cheap and easy soup with a sprinkle of parsley and some warm crescent rolls for the perfect meal your family is sure to request again and again.
- 2 potatoes, chopped
- 1 c carrots, chopped
- 1 c celery chopped
- 4 oz bacon, cooked (reserve bacon grease if possible)
- 4 c chicken broth (Try Better Than Bouillon - it's a great panty staple!)
- dash of Cajun seasoning
- parsley, chopped
- In a large pot, cook the potatoes in the chicken broth until tender.
- While the potatoes are cooking, saute the vegetables in bacon grease or olive oil.
- Stir the vegetables into the large pot with potatoes and broth.
- Portion soup into bowls and top with a sprinkle of chopped parsley.
