Ahh…I love summer vacation. Instead of waking up to my alarm clock singing “gooood morningggg” in the most obnoxious way possible (I hate it, but it’s the only thing that gets me out of bed at 5 am), I am gently awakened by the soft sun gleaming through the windows. Well, that or a toddler jumping on my stomach. Either way it’s better then the horribleness of my alarm. Anyway, since we don’t have to rush off to school, we have been savoring our slow mornings and experimenting with breakfast options. Sometimes we are healthy and make eggs and veggies. Other times we’re not so healthy, and pop cinnamon rolls in the oven. Today, though, we made something extra special.
I had a moment of inspiration this morning while Ella was watching her cartoons. As I thought about what to make for our morning meal, the idea to combine two of my favorite breakfast recipes, lemon poppy seed muffins and waffles, popped into my head. So as the final Doc McStuffins theme song played on TV, Ella and I headed to the kitchen to give this crazy idea a try. Using a basic waffle recipe, I added fresh squeezed lemon juice and poppy seeds. To top it off, I made the lemon glaze from my mom’s muffin recipe and used that in place of syrup.
Oh My Goodness! These waffles are absolutely the best! The lemony goodness is tart and sweet. It’s the perfect start (or end) to a sunny summer day. In fact, Ella is currently eating the leftovers next to me at the table. And if you know Ella, you know what a miracle that is. They are smelling pretty good too! I think I am going to join her. I hope you enjoy the recipe as much as we do!
Ingredients
- 1 1/2 C Flour
- 3 Tbsp Sugar
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- Zest of 1 Lemon
- 1/3 C Butter
- 4 Tbsp Lemon Juice (about 2 lemons worth)
- 2 Eggs
- 1 1/2 Tbsp Poppy Seeds
- 1 1/3 C Powdered Sugar
- 2 Tbsp Lemon Juice
- 1 tsp Butter
Instructions
- Preheat the waffle iron.
- In a medium sized bowl, mix together all of the dry ingredients except poppy seeds.
- In a separate bowl, mix together the wet ingredients - butter, lemon juice, and eggs.
- Pour the wet ingredients into the flour mixture and stir well.
- Mix in the poppy seeds.
- Pour batter into the prepared waffle iron.
- Combine the powdered sugar with lemon zest and melted butter.
- Drizzle over cooked waffles.
Wow, that looks truly delicious!! I have got to make these. I’m sure the kids would love them. 🙂
