Easy Holiday Brunch Menu

I can’t believe Christmas is less than one week away! I’ve been so busy these last few weeks, December has passed incredibly quickly. I am really excited for the holidays this year. My family is coming down to spend Christmas at our house, and I can’t wait until they get here. It is going to be an awesome time together!

Because I don’t see my family often enough, I want to relax and enjoy our time together. Instead of stressing over a big, complicated meal, I’m simplifying this year with a yummy Christmas brunch!

On the menu is a delicious ham, green onion and cheese frittata with crispy potatoes and Gold Peak Tea or coffee to drink. This easy meal takes less than an hour to prepare, so I can spend the day with my family.

For table top decorations, I’m keeping it simple too. I picked up a festive, red and white table runner and nestled three white pillar candles among pine cones, nuts, small evergreen boughs and some glittery ornaments. Easy, inexpensive and absolutely beautiful – that’s my kind of decorating!

Holiday Brunch Recipes

Below are the recipes for both the frittata and the potatoes so you can have simple and yummy brunch with your family too. I hope you enjoy!

Easy Ham and Cheese Frittata

Ingredients

  • 5 eggs
  • 1/2 cup milk
  • 1 Tbs Basil
  • Pepper
  • 1 cup chopped ham
  • 1/4 cup green onions
  • 1/2 cup cheddar cheese

Instructions

  1. Preheat oven to 425.
  2. In a oven safe skillet, heat the ham.
  3. Meanwhile, mix all other ingredients in a mixing bowl.
  4. Once the ham is warm,pour all other ingredients into the skillet and mix.
  5. Cook on the stove top over medium low heat for 5 minutes.
  6. Transfer skillet to the oven, and cook for 10 - 15 minutes. Until the edges of the frittata are lightly browned.

To make the crispy potatoes, simply cut potatoes into cubes and toss with olive oil, salt and pepper. Spread evenly on a baking sheet and cook at 425 for 30 minutes, stirring every 10 minutes. Finally, turn the oven up to 500 and cook an additional 10 minutes. That’s all there is to it!
